Tuscan Chicken with White Beans
This Tuscan Chicken with White Beans is an easy skillet chicken recipe that comes together in about 20 minutes.
This is an easy dinner recipe that you can pull together with just a few simple ingredients. Instead of adding pasta to this dish, we add white beans making it low carb and providing extra protein and fiber.
This skillet chicken is marinated for a few hours (though you could let it marinate overnight) before its cooked in the pan. When the chicken and beans simmer together, a light luscious sauce forms with rich flavors from the marinade. Tuscan Chicken Recipe
This chicken skillet recipe comes together quickly and easily. The only ingredients that I need to plan ahead for are the chicken and parmesan. I typically have the rest of the ingredients on hand.
For The Marinade
- 1/3 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 1/8 cup lemon juice
- 1 teaspoon each dried oregano, dried basil leaves, dried parsley and dried rosemary
For the Chicken
- 4 tablespoons extra-virgin olive oil
- 1-1/2 pounds chicken breast, cut into cubes
- 1/2 large onion, thinly sliced
- 1-1/2 cup cannellini beans, rinsed and drained
- 3 large cloves garlic, smashed and peeled
- 2-3 tablespoons sun-dried tomatoes packed in oil, chopped
- salt and freshly ground black pepper to taste
- parmesan cheese for serving
How To Make Tuscan Chicken
After the chicken marinates for up to 2 hours, this chicken skillet takes just about 15 minutes to cook start-to-finish
For The Marinade
- Place all of the ingredients in a large plastic bag.
- Add the chicken to the marinade, seal the bag and refrigerate for a minimum of 2 hours.
For The Chicken
- Heat the olive oil in a large skillet over medium heat and add the marinated chicken cubes.
- Cook the chicken until it browns nicely on all sides, about 3 to 5 minutes.
- Add the onion and garlic and sauté for 2 to 3 minutes.
- Stir in the sun dried tomatoes and beans and cook over low-heat for another 4 to 5 minutes until the beans are heated through, the chicken is cooked through and a delicious rich sauce begins to form.
