This is an easy skillet dinner recipe that you can pull together with just a few simple ingredients. Rather than adding pasta to this dish, we add white beans instead making it low carb and providing extra protein and fiber.

This Tuscan skillet chicken is marinated for a few hours (though you could let it marinate overnight) before its cooked in the pan. When the chicken and beans simmer together, a light luscious sauce forms with rich flavors from the marinade.  This humble Tuscan chicken skillet is delicious, quick and easy, and good, honest stick-to-your-ribs comfort food.  I serve this dish with pesto….because really….pesto makes everything it touches taste even more incredible!
