If you have never made pizza with tortilla before, you’re in for a treat! The tortilla turns out deliciously crispy like flatbread and they are super quick and easy to make.

Tortilla Pizza Recipe

For convenience, I use store-bought rotisserie chicken for this BBQ Chicken Pizza recipe. To make individual tortilla pizzas, use taco size flour tortillas instead and adjust the ingredients accordingly.

  • Flour Tortillas. I use either Guerrero or Mission flour tortillas for this recipe. Mission also has gluten-free flour tortillas for those who are gluten intolerant.
  • Barbecue Sauce. I like to use  Sweet Baby Ray’s Barbecue Sauce (Original)
  • Adobo Sauce. Adding just a bit of adobo sauce to the barbecue sauce, gives the sauce a delicious slightly smokey flavor.
  • Rotisserie Chicken. For convenience, I use rotisserie chicken for this these individual pizzas, but homemade grilled chicken does the trick as well!
  • Cheese. I use a Mexican cheese blend for these pizzas, but feel free to use Mozzarella, or cheddar…whatever you prefer. 
  • Red Onion. I love the pieces of red onion on these pizzas, especially if the ends get a little charred!
  • Tomato. Adding chopped ripe tomato really adds a freshness to these pizzas!
  • Cilantro. Chopped cilantro gives these pizzas a delicious pop of flavor!

How To Make Tortilla Pizza

This is a pizza the whole family will love to make together! They’re so quick, easy and customizable to make. And there’s little clean-up afterward!

  1. Heat oven. Preheat oven to 350 degrees.
  2. Baking sheet. Line a baking sheet with tinfoil and place the tortilla flat on it.
  3. Sauce. In a small bowl, mix the barbecue sauce and adobo sauce together.
  4. Apply sauce. Use a pastry-brush to apply the sauce mixture evenly to the tortilla surface.
  5. Toppings. Spread pinto beans, cheese, and red onion evenly over the tortilla
  6. Bake. Place Tortilla Pizza in a toaster over or conventional oven and bake for roughly 8 to 10 minutes until cheese is melted and the tortilla is golden-brown, crisp. These pizzas bake quickly, so keep a close eye on them so they don’t burn.
  7. Garnish. Sprinkle fresh tomatoes, green onions, and cilantro evenly over the top.

  • 1 large (12 inch) burrito-size flour tortilla
  • 1/4 cup bottled barbecue sauce (we like Sweet Baby Ray's original)
  • 1/4 teaspoon adobo sauce
  • 1/2 cup rotisserie chicken, chopped
  • 1/2 cup cheese
  • 1/4 cup red onion, cut into slivers
  • 1/2 cup tomatoes, chopped
  • 1/4 cup cilantro
  • 2-3 green onions, chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with foil and place the tortilla on it.
  3. In a small bowl, mix barbecue and adobo sauce together.
  4. Brush the barbecue sauce mixture evenly on the tortilla.
  5. Sprinkle chopped pieces of chicken over the barbecue sauce mixture.
  6. Sprinkle grated cheese evenly over the chicken and then evenly distribute red onion evenly over the cheese.
  7. Bake in the oven for 8-10 minutes or until the cheese is melted and the ends of the tortilla are golden brown and lightly crispy. These pizzas bake quickly, so keep a close eye on them so they don't burn.
  8. Remove the pizza from oven and set aside to cool for a minute.
  9. Garnish with chopped tomatoes, chopped green onion and fresh cilantro.

  • 1-1/2 cup rotisserie chicken, chopped
  • 1 cup cheese
  • 1/2 cup red onion, cut into slivers
