Watermelon Pizza Recipe
For the Pizza
- 1/2-inch thick slice of watermelon (cut into 8 wedges)
- 1/2 cup granola
- an assortment of your favorite fruits (strawberries, raspberries, blackberries, cherries, kiwi, peaches, nectarines, apple slices, banana slices, pomegranate seeds, honeydew balls, cantaloupe balls, red and green grapes, etc.)
- sprigs of mint for garnish (optional)
For the Greek Lime Yogurt
- 1 cup plain Greek yogurt
- 2 – 3 tablespoons clover honey
- zest and juice of 1 large lime (1-2 tablespoons lime juice)
For the Honey-Lime Drizzle
- 1/4 cup clover honey
- 3 – 4 tablespoons fresh lime juice
- 1/2 heaping teaspoon grated lime zest
How To Make Watermelon Pizza
For the Pizza
- Slice the watermelon into wedges
- Spoon a heaping tablespoon of yogurt on the top of each watermelon wedge
- Sprinkle the yogurt with granola.
- Arrange assorted fruit on top of each wedge.
- Drizzle honey-lime drizzle over the top of the pizza.
For the Greek Lime Yogurt
- Mix all of the ingredients in a small bowl. Refrigerate before using.
For the Honey-Lime Drizzle
- Mix the honey, lime juice and lime zest in a small bowl.
- Drizzle over the top of the fruit.
