Lime Ginger Curry Dressing Recipe

This dressing is quick and easy to pull together and you’ll only need a hand full of ingredients to make it.

  • Fresh lime juice and zest.  We use fresh squeezed lime juice for this recipe. Don’t use the bottled stuff. 
  • Olive oil.  We use olive oil for our dressings, but you can use avocado oil if you prefer.
  • Honey. I really like the taste of clover honey, but use whatever honey you like.
  • Ginger. We use fresh grated ginger for this recipe. It adds a really nice flavor to the mix.
  • Seasoning. We add a pinch of curry to this dressing, which gives this dressing a really great flavor. It’s just a hint of curry, so if you want a stronger curry flavor, then feel free to add a little more. Not a fan of curry, then omit it altogether.

How To Make Lime Ginger Curry Salad Dressing

  1. Whisk the ingredients together in a bowl or add the ingredients to a mason jar, seal the lid and shake vigorously to blend well. You can also add the ingredients to a wide-mouth mason jar and blend using an immersion blender to really blend the grated ginger well.
  2. Store in an airtight container in the refrigerator. If properly stored, the dressing should last up to a week.

How To Juice Limes

There’s a few easy ways to juice a lime, but rolling, slicing and squeezing citrus is the method I most frequently use.

  1. Hand squeezing. Place the lime on the counter and using the palm of your hand apply pressure to the lime as you roll the lime back and forth. Then slice the lime in half and squeeze the lime over a bowl using your hand to extract all of the juice from the lime. 
  2. Lime reamer.  Place the lime on the counter and using the palm of your hand apply pressure to the lime as you roll the lime back and forth. Then slice the lime in half and place the lime on the reamer sliced side down and twist the lime half to extract all of the juice from the lime. 
  3. Juice presser.  Slice the lime in half and place half of the lime sliced side up on the presser and squeeze the handles together as the juice squeezes out into a bowl.

How Much Juice Is In One Lime?

Limes can vary in the amount of juice they produce. You can cut open a lime and it might be as juicy as a lemon and other times, they’ll be very dry on the inside hardly producing any juice at all.

  • 1 large lime can produce 3 tablespoons lime juice
  • 1 medium lime can produce 2 tablespoons lime juice
  • 1 small lime can produce 1 to 1-1/2 tablespoons lime juice
