Salad dressings don’t get much easier than this one. This homemade lemon vinaigrette is fresh and light and makes a great basic lemon dressing to toss with simple greens.

This olive oil lemon dressing is my riff on the dressing served at a local favorite restaurant of mine. It’s a simple mix of lemon and lime juice with light olive oil and salt and pepper. It’s a good basic vinaigrette and the flavor is pretty spot-on to the restaurant version that I like so much.

Lemon Olive Oil Dressing Recipe

This lemony dressing is so tasty that you’ll want to be sure to keep extra lemons and limes on hand so you can whip it up in a pinch.

  • Fresh lemon and lime juice. Fresh is best for this recipe. Lemons and limes add a bright fresh flavor.  Don’t use the bottled stuff. 
  • Light olive oil . We use light olive oil rather than extra-virgin so the dressing is light and lemony.
  • Water.  I like to add 2-3 tablespoons of water to the dressing so the citrus flavors shines through without so much tartness. 
  • Seasoning. We season this dressing with a little salt and pepper.

How To Make Lemon Olive Oil Salad Dressing

The consistency for this vinaigrette is best when blended in a blender rather than whisked or shaken.

  1. Add all of the ingredients to a blender and blend for a few seconds until the ingredients are well incorporated.
  2. You can also add all of the ingredients to a bowl and whisk together using a wire whisk, or add everything to a mason jar, seal the lid and shake well.

Serving Suggestions

This vinaigrette brightens any salad it’s tossed with, but I especially love to toss this lemon olive oil dressing with a salad made with Romain lettuce leaves, avocado, tomatoes, red onion, kalamata olives and Feta cheese. 

How to Juice Lemons

Some lemons can be tougher to juice than others, and some lemons produce more juice than others. Here are a few tips and tricks on juicing lemons to get the most juice from them to add to all your favorite lemon recipes.

  1. With a lemon sitting on a countertop, press down hard with the palm of your hand and roll the lemon back and forth a few times. This helps to break the juice away from the pulp.
  2. Cut the lemon in half lengthwise if you’re juicing by hand. It’s easier to grip when cut lengthwise.
  3. Cut the lemon in half crosswise if you’re using a juicer or a reamer.
  4. Using a fork, poke the pulp a few times to loosen up the membranes to release the most juice.
  5. Use a reamer, juicer or a pair of cooking tongs to extract as much juice from the lemon as possibe.
