This recipe is great to make all year round.  But during the summer months, when everyone loves to fire up their grill, this recipe really shines. you’ll just marinate the chicken then grill it and the corn outdoors.  While the chicken and corn are cooking, quickly whip up this easy black bean sauce and so effortlessly dinner is done!  This is one of those meals that comes together in a pinch, yet looks like you spent some time preparing it.

GARLIC CHICKEN RECIPE

  • Chicken thighs 
  • Garlic
  • Lime juice
  • Lime zest
  • Extra virgin olive oil
  • Honey
  • Paprika
  • Fresh parsley

HOW TO MAKE GARLIC CHICKEN

This chicken in black bean sauce cooks in about 20 minutes, but you’ll want to marinate the chicken for a minimum of 2 hours beforehand.

  • Mix the garlic, lemon and lime juices, lemon and lime zest, olive oil, honey and paprika in a large plastic bag (or a bowl). Whisk to blend.
  • Add the chicken and seal the bag (or place plastic wrap over the bowl).
  • Refrigerate 2 hours or overnight
  • Heat a grill over medium low heat
  • Grill the chicken on each side for about 5 – 7 minutes or until the juices run clear and the chicken is no longer pink on the inside

BLACK BEAN SAUCE

  • Extra virgin olive oil
  • Onion
  • Garlic 
  • Jalapeño pepper
  • Ground cumin
  • Canned black beans
  • Chicken broth
  • Fresh cilantro

HOW TO MAKE BLACK BEAN SAUCE

This black bean garlic sauce is made with very basic ingredients that are tossed into a blender and then simmered into a richly flavored sauce.  I’ve kept things fairly tame, but if you like things on the fiery side, feel free to add more jalapeño to this sauce.  

  1. Saute the onion and garlic
  2. Transfer the onion and garlic mixture to a blender
  3. Add the jalapeno, cumin, black beans, chicken broth and cilantro to blender
  4. Blend until the mixture is blended but there are still whole pieces of bean
  5. Return the mixture to the skillet and simmer

CORN SALSA

The corn salsa is super easy to make.  If you have a corn allergy or just don’t care for corn, the chicken in black bean sauce is amazing on its own.  The corn salsa is totally optional.1 organic ear corn, cooked and cut from the cob.

  • Corn
  • Tomato
  • Green onions
  • Cilantro
  • Lime juice

HOW TO MAKE CORN SALSA

  1. If you’re using fresh corn on the cob, either grill it or boil it then cut the corn from the cob. 
  2. Place all of the ingredients in a bowl and toss to combine.
  3. Add sea salt and freshly ground black pepper to taste (if desired).

Ingredients

Garlic Chicken

  • 4 free-range chicken thighs (bone in or boneless with skin)
  • 2 cloves garlic, finely minced
  • 3 tablespoons lime juice
  • 1 teaspoon lime zest
  • 2-1/2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon paprika
  • fresh parsley, coarsely chopped for garnish
  • lemon slices for garnish

Black Bean Sauce

  • 2 teaspoons extra virgin olive oil
  • 2 tablespoons onion, chopped
  • 2 garlic cloves, minced
  • 1 small jalapeño pepper, seeded and minccd
  • 1/2 teaspoon ground cumin
  • 1 15-ounce can organic black beans, rinsed and drained
  • 1-1/4 cup low-sodium chicken broth
  • 1 tablespoon fresh cilantro, chopped

Corn Salsa

  • 1 organic ear corn, cooked and cut from the cob
  • 1 large organic tomato, chopped
  • 2 green onions, sliced (white and light green parts)
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh lime juice

Instructions

Garlic Chicken

  1. Mix the garlic, lemon and lime juices, lemon and lime zest, olive oil, honey and paprika in a large plastic bag (or a bowl). Whisk to blend.
  2. Add the chicken to the marinade and seal the bag (or place plastic wrap over the bowl).
  3. Refrigerate the chicken for 2 hours or it can stay in the fridge over night.
  4. Heat a grill over medium low heat
  5. Add the chicken and grill on each side for about 5 - 7 minutes or until the juices run clear and the chicken is no longer pink on the inside

Black Bean Sauce

  1. Heat the olive oil in a skillet
  2. Sautee the onion over low-heat for 5-7 minutes or until lightly golden
  3. Add the garlic and saute for another 1-2 minutes
  4. Transfer the onion and garlic mixture to a blender
  5. Add the jalapeno, cumin, black beans, chicken broth and cilantro
  6. Blend until the mixture is blended but there are still whole pieces of bean
  7. Return the mixture to the skillet and simmer on low heat for 3-5 minutes until heated through

For the Corn Salsa

  1. Grill or boil corn on the cob. (or heat through frozen or canned corn)
  2. Place all of the ingredients in a bowl and toss to combine.
  3. Add sea salt and freshly ground black pepper to taste (if desired).
