Chickpea Salad Recipe
- Canned garbanzo beans (aka chickpeas) – I use low-sodium canned garbanzo beans for this recipe.
- Fresh celery – Celery adds a nice crunch to this salad.
- Raisins – The sweetness of raisins mellows the earthiness of curry flavor.
- Toasted pecans – You could use walnuts, but I like pecans for this salad best. They also add a nice crunch to the mix.
- Flat leaf cilantro (or parsley) – You could use parsley if you want, but cilantro with the curry and raisins makes this salad pretty addictive!
- Curry salad dressing – This curry salad dressing is so easy to make and it tastes amazing.
How to Make Chickpea Salad
This chickpea salad comes together in about 15 minutes start-to-finish.
- Make dressing. Whisk the ingredients together in a small bowl.
- Prepare ingredients: In a large bowl add the garbanzo beans, chopped celery, raisins, pecans and parsley.
- Toss with dressing: Pour the chickpea salad dressing over the bean mixture and toss to coat well.
- Seasoning: Add salt and freshly ground black pepper to taste.
- Enjoy: Serve on a bed of mixed greens or enjoy as is.

- 2 15-ounce cans garbanzo beans (aka chickpeas)
- 1 celery stalk, chopped
- 1/3 cup raisins
- 1/4 cup toasted pecans, chopped
- 1/4 cup cilantro (or flat leaf parsley), chopped
For the Curry Dressing
- 2 tablespoons lime juice (about 2 limes)
- 1/3 cup extra-virgin olive oil
- 2 teaspoon curry powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- 2 teaspoons pure maple syrup
- Sea salt and freshly ground black pepper to taste
Instructions
For the Salad
- In a large bowl add the garbanzo beans, celery, raisins, pecans and parsley.
- Pour the dressing over the bean mixture and toss to coat well.
- Add salt and freshly ground black pepper to taste.
- Serve on a bed of mixed greens or enjoy as is.
For the Dressing
- In a small bowl, mix the lime juice, olive oil, curry powder, turmeric, cumin and maple syrup. Blend well.
