Cucumber Lemonade is a delicious and nutritious non-alcoholic drink that you’ll want to sip all summer long.

Cucumber Lemonade Recipe

We use our honey lemonade as a base for this recipe, then we add cucumber juice to the mix. 

  • Lemon Juice. Juice enough lemons so you have 1 cup lemon juice.  Strain lemon juice through fine mesh strainer into the glass pitcher. 
  • Sweetener.  We use honey for this recipe rather than pure cane sugar.
  • Water. Dilute with as much or as little water as you like for your desired level of sweetness and tartness.
  • Cucumber.  We use English cucumber for this recipe because they aren’t as bitter tasting as garden cucumbers. 
  • Variations. Blend a small sprig of fresh mint leaves with the cucumber and strain through a fine mesh strainer. This adds a light minty flavor to the mix.
  • Garnish. Garnish with sliced cucumber and lemon and fresh mint leaves.

How To Make Cucumber Lemonade

This recipe for cucumber lemonade is quick and easy to make. We use just 4 ingredients and it comes together in about 10 minutes start to finish!

  • Juice Lemons.  Juice enough lemons so you have 1 cup lemon juice.   
  • Blend Cucumbers. Remove the plastic from the English cucumber and rinse the cucumber under water. Chop and transfer to a blender. Pour 2 cups of water over the cucumber, place lid on the blender and blend until liquified. Strain over a fine wire mesh strainer into a pitcher.
  • Mix Ingredients. Pour the lemon juice, remaining water and honey into the pitcher and stir using a wooden spoon. Adjust flavor by adding more water or honey for desired sweetness.
  • Serve. Chill in the refrigerator before serving. Serve over ice and garnish with lemon and cucumber slices and sprigs of fresh mint.
  • Storing Leftovers. Store in an air tight container or sealed mason jars in the refrigerator for 3-4 days. You can also pour into ice cube trays to make flavored ice cubes to add to water or iced tea like I’ve done with these Arnold Palmer (Sweet Tea) Ice Cubes

How to Juice Lemons

Some lemons can be tougher to juice than others, and some lemons produce more juice than others. Here are a few tips and tricks on juicing lemons to get the most juice from them to add to all your favorite lemon recipes.

  1. With a lemon sitting on a countertop, press down hard with the palm of your hand and roll the lemon back and forth a few times. This helps to break the juice away from the pulp.
  2. Cut the lemon in half lengthwise if you’re juicing by hand. It’s easier to grip when cut lengthwise.
  3. Cut the lemon in half crosswise if you’re using a juicer or a reamer.
  4. Using a fork, poke the pulp a few times to loosen up the membranes to release the most juice.
  5. Use a reamer, juicer or a pair of cooking tongs to extract as much juice from the lemon as possibl

How Much Lemon Juice In One Lemon?

Want to know how much juice in a lemon? Well, the answer to that question depends on the size and ripeness of the lemon. The more ripe the lemon, the more juice it will likely produce. And obviously larger lemons will produce more juice than smaller lemons.

  • 1 small lemon will produce about 2-3 tablespoon (or 1-1.5 fluid ounces)
  • 1 medium lemon will produce about 3-4 tablespoons (or 2 fluid ounces)
  • 1 large lemon will produce about 4-5 tablespoons (or 2.5 fluid ounces)

How Many Lemons for 1 Cup Juice?

There are 16 tablespoons in 1 cup, so you’ll either need about 8 small lemons, 5 medium lemons, or 4 large lemons to get 1 cup of lemon juice.  I always buy a few extra lemons, just in case some of the lemons don’t produce much juice.

Ingredients

  • 2 cups cucumber juice
  • 1 cup fresh squeezed lemon juice
  • 1 cup raw honey
  • 6 cups water

Instructions

  1. Juice enough lemons for 1 cup lemon juice.
  2. Add the chopped cucumber and 2 cups water to a blender and blend until the cucumbers are liquified.
  3. Strain cucumber juice through a fine mesh strainer into a pitcher, pressing the cucumber puree with a silicon spatula to push the cucumber juice through the strainer.
  4. Stir in the honey, lemon juice and remaining 6 cups water into the pitcher. Stir well so honey is dissolved.
  5. Add more water or honey to adjust the tartness and sweetness for your personal preference.
