Homemade Champagne Vinaigrette dressing goes with just about any salad you’ll want to toss it with, whether it’s leafy greens, bean, pasta or a quinoa salad.

There’s a local restaurant that I love to eat at, and like a creature of habit, I usually order the same salad. It’s a delicious assortment of ingredients tossed with mixed greens and a perfect champagne vinaigrette. Champagne vinegar has a more mild flavor in comparison to red wine vinegar and balsamic vinegar and it’s great for making light vinaigrettes to toss with tender greens. This champagne vinaigrette dressing is my riff on their dressing.

Champagne Vinaigrette Recipe 

  • Champagne Vinegar. This is the key ingredients, so be sure to use an affordable high quality champagne vinegar. 
  • Lemon Juice. A little lemon juice adds a perky flavor to the mix.
  • Olive Oil. Also a key ingredient, so use a good light olive oil, preferably one without an intense flavor so the flavors of the other ingredients can also be enjoyed. 
  • Mustard. We use Dijon mustard to help emulsify the dressing.
  • Honey.  A little honey adds a nice balance to the champagne vinegar.
  • Garlic. This adds a nice flavor to the dressing. 
  • Seasoning. We just sprinkle in a pinch of salt and pepper to season this dressing with.
  • Water. This is a little tip. If the vinegar in a homemade salad dressing has too much kick for your tastebuds, just add a tablespoon or two of water to tame the vinegar.

How To Make Champagne Vinaigrette

  1. Blend Ingredients. Add the ingredients to a blender and blend until the ingredients are smooth and blended well. You can also whisk the ingredients together in a bowl or add ingredients to a mason jar, seal the lid and shake vigorously to blend well. 
  2. Storing. Leftovers will keep in the tightly sealed mason jar in the refrigerator for up to a week. You will need to let the dressing sit at room temperature for a few minutes because the olive oil will solidify a bit in the refrigerator.

Is Champagne Vinegar Gluten Free?

Yes! Champagne vinegar, along with apple cider vinegar, red wine vinegar and balsamic vinegar are gluten-free. Non-distilled vinegars made from wheat, rye and barley are not considered gluten-free.

  • 2 tablespoons Dijon mustard
  • 1 tablespoon pure clover honey
  • 3/4 cup light olive oil
  • Salt and pepper to taste

Notes

Variations

  • Add 1-2 tablespoons water if the vinegar taste is too tart for you.
  • Add 1-2 tablespoons additional honey if you like a sweeter vinaigrette.
  • Use extra-virgin olive oil if you want a more bold olive oil flavor.
