Variations
- If you want the tuna egg salad to be creamy, add a tablespoon or two of mayo or yogurt.
- Use canned salmon instead of tuna (add 1/2 teaspoon curry which mellows the salmon flavor).
- Use green onions instead of red onions.
How To Make Tuna Avocado Toast
- Toast the bread in a toaster or grill in in a pan with a little olive oil (or olive oil + butter), then mash avocado slices directly on the toast. If you toast the bread in the oven, drizzle a little olive oil over the toast before mashing the avocado on it.
- In a small bowl, mix lemon juice, Dijon mustard and olive oil together.
- In a separate bowl flake the tuna apart with a fork and add the chopped hardboiled eggs. Lightly mash the tuna and egg together. Stir in the dressing to the mixture.Season with salt and freshly cracked pepper
- Spoon the tuna mixture over the avocado toast.
- Garnish with chopped tomatoes, Parmesan cheese shavings and chopped parsley.

- 1 teaspoon Dijon mustard

- 1/4 cup tomato, chopped
