Grilled Chicken Sandwich
This smoky Grilled Chicken Sandwich recipe is made with grilled chicken, cheddar cheese, turkey bacon, avocado, tomato, onion, mustard aioli and spring mix tossed in a smoky chipotle ranch dressing.
These grilled chicken club sandwiches are easy to pull together for family get-togethers, backyard barbecues, game day and tailgate parties.
This Grilled Chicken Sandwich recipe is made with thin chicken breasts, bacon (we use turkey bacon just because I don’t eat pork), cheddar cheese (but you can use whatever cheese you like best), tomato, onion, avocado, greens and Brioche buns (but you can use standard hamburger buns or ciabatta rolls). What sets this sandwich apart from other common grilled chicken sandwiches is the Chipotle Ranch Dressing that we toss the greens with before piling it on the sandwich.
Tossing the spring mix lettuce in chipotle ranch adds an amazing smoky flavor to the sandwich compared to using just plain lettuce. Try it on your burgers as well! We also use a mustard aioli to slather on the buns for this sandwich instead of using plain ol mayonnaise (which takes just a quick minute to make). The combo of flavors in this sandwich are really amazing and promises to be a hit at your next family gathering or backyard barbecue.
Grilled Chicken Sandwich Recipe
This Grilled Chicken Club Sandwich is a family favorite!
- Chicken, We use thin cut chicken breasts for this sandwich. We marinate it for a few minutes in olive oil, lemon juice, honey and salt and pepper. Place the chicken into a bowl of shallow dish and pour the marinade over the chicken. Cover and marinate for at least 30 minutes.
- Turkey Bacon. When cooked right, turkey bacon is as flavorful as regular bacon and it contains less calories and less saturated fat.
- Cheese. We use cheddar cheese slices (but you could use grated cheese if you like).
- Avocado. We add a few thin slices to this sandwich.
- Onion. We like to use red onion slices for this sandwich.
- Mustard Aioli. We use a tasty mustard aioli (made with mayonnaise, Dijon mustard and coarse grain mustard – 2 parts mayo to 1 part mustard) to slather on the buns.
- Chipotle Ranch. We make a chipotle ranch dressing to toss our greens with rather than using plain lettuce. This simple step really elevates sandwiches and burgers!
- Tomato. We like to add few slices of tomato to this sandwich.
- Greens. We use spring mix tossed lightly in a Chipotle Ranch Dressing to pile in this burger. It really makes the sandwich a winner! Not a fan of chipotle, then toss the greens in our BBQ Ranch Dressing, Jalapeno Ranch Dressing or Homemade Ranch Dressing instead.
- Bread. We like to use Brioche buns for this sandwich, but you could use ciabatta rolls or hamburger buns.

How To Make Grilled Chicken Sandwich
These Grilled Chicken Club Sandwiches are perfect to grill outdoors during the warm summer months!
- Make Aioli. Measure the ingredients and add them to a small mixing bowl. Using a fork or spoon mix the ingredients together so they are well blended.
- Make Chipotle Ranch Dressing. Measure the ingredients and add them to a blender or food processor. Blend the ingredients until they are smooth and creamy. Refrigerate in an airtight container until you’re ready to serve it.
- Fry Bacon. Heat 2-3 tablespoons extra-virgin olive oil in a skillet. Carefully lay the turkey bacon slices into the hot oil, cooking 3-4 slices at a time. Cook for 2-3 minutes on each side until crispy.
- Grill Chicken. Grill chicken for about 5 minutes on each side. Add slice of cheese and grill with the lid covered so the cheese melts.
- Toast Buns. Spread a little softened butter on both sides of the bun and grill for just a minute until the bun is lightly toasted on both sides.
- Assemble Sandwiches. Slather the mustard aioli on the bottom slice of toasted bun. Add the grilled chicken breast, bacon, tomato slices, onion slices, avocado and sping mix (tossed in chipotle aioli). Place the top part of the bun on top of the sandwich.
Easy Chipotle Ranch Dressing
To make this Chipotle Ranch just put all of the ingredients in a blender and blend until smooth and creamy.
- Real Mayonnaise (like Best Foods or Hellman’s)
- Buttermilk
- Garlic
- Green onions (white and light green parts)
- Canned adobo sauce
- LIme juice
- Onion powder
- Garlic powder
- Salt and freshly ground black pepper to taste
Mustard Aioli Recipe
To make this tasty mustard aioli we mix together 2 parts mayonnaise to 1 part mustard (1/2 cup mayonnaise, 2 tablespoons Dijon Mustard and 2 tablespoons Coarse Grain Mustard). You can use all Dijon or all coarse grain mustard if you like.
- Mayonnaise. Use a real mayonnaise like Best Foods or Hellman’s.
- Mustard. We use both a little Dijon Mustard (Maille brand) and Coarse Grain Mustard (also Maille brand) for this aioli.

Grilled Chicken Sandwich

Ingredients
For the Marinade
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 tablespoon garlic herb seasoning
For the Sandwiches
- 4 thin sliced chicken breasts
- 8 strips of turkey bacon
- 4 slices of cheddar cheese
- 1 avocado, sliced thin
- 1 large tomato, sliced
- 1 red onion, sliced
- 2 cups spring mix lettuce
- 4 Brioche buns
For the Mustard Aioli
- 1/2 cup real mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons coarse grain mustard
For the Chipotle Ranch Dressing
- 1 cup real mayonnaise (like Best Foods or Hellman's)
- 3/4 cup buttermilk
- 2 cloves garlic, smashed and chopped
- 2 green onions (white and light green parts), chopped
- 3 teaspoons canned adobo sauce
- 1 tablespoon lime juice
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
Instructions
For the Marinade
- Add olive oil, lemon juice and seasoning to a large bowl. Transfer chicken to the bowl and turn to coat the chicken in the marinade. Let chicken marinate for 5-10 minutes.
- Remove chicken breasts from marinade and place on the grill. Discard marinade.
For the Chicken
- Preheat grill to medium-high heat.
- Heat 2-3 tablespoons extra-virgin olive oil in a skillet. Carefully lay the turkey bacon slices into the hot oil, cooking 3-4 slices at a time. Cook for 2-3 minutes on each side until crispy. Transfer to a paper towel lined plate.
- Grill chicken for about 3-5 minutes on each side (depending on thickness of chicken). Add slice of cheese and grill with the lid covered so the cheese melts.
- Spread a little softened butter on both sides of the bun and grill for just a minute until the bun is lightly toasted on both sides.
- Toss spring mix leaves in a bowl and toss with about 3-4 tablespoons over the leaves. Using two spoons (or your hand) toss the leaves so they are all lightly coated with the dressing. Add more dressing as needed.
- Slather the mustard aioli on the bottom slices of toasted bun. Add the grilled chicken breast, bacon, tomato slices, onion slices, avocado and 1/4 cup spring mix (tossed in chipotle aioli) to each sandwich. Place the top part of the bun on top of each sandwich.
For the Mustard Aioli
- Add ingredients to a small bowl and mix together using a spoon.
For the Chipotle Ranch
- Add ingredients to a blender and blend until smooth and creamy.
- Refrigerate the dressing up to an hour before serving so the flavors have a chance to blend together.
