Arroz Verde Recipe

  • Rice. We use long grain white rice for this recipe.
  • Oil. I like to use light olive oil to saute the onion and garlic in, but you can use any light oil you prefer.
  • Salsa Verde. Use either homemade salsa verde or a good store-bought brand.
  • Aromatics. We use onion and garlic to add flavor to this rice dish.
  • Broth. I like to use low-sodium chicken broth, but you can use vegetable broth if you like.
  • Herbs. We toss the cooked rice with fresh cilantro.

How To Make Green Rice

This green rice comes together in about 30 minutes start-to-finish.

For starters, you want to rinse the rice well under water. This step is important for removing starches on the outside of the rice which will cause the rice to clump and stick together as it cooks. Add rice to a fine mesh strainer and run under cold water until the water runs clear.
