I tend to make a lot of popsicles during the warms summer months. These homemade strawberry popsicles also delicious, nutritious and rich with antioxidants and anti-inflammatory benefits!

This strawberry popsicle recipe is made with natural ingredients. We use pure maple syrup as the sweetener, but you can use honey if you prefer.

How to Make Strawberry Popsicles
These healthy strawberry popsicles are quick and easy to make, but they’ll need to sit in the freezer for 6-8 hours to freeze solid.
- Prepare strawberries. Remove stems and cut strawberries in half (if small strawberries).
- Mascarate strawberries. Put the strawberries in a bowl with the pure maple syrup and let mascarate for 10-15 minutes.
- Cook strawberries. Simmer the strawberries in a saucepan with water over medium low heat for about 5 minutes.
- Blend strawberries. Let strawberries cool then transfer to blender and add the lemon juice and puree until mixture is smooth (you can leave some pieces of strawberries for a more rustic popsicle).
- Freeze popsicles. Divide mixture among the popsicle molds. Place in the freezer for about 1-1/2 to 2 hours then remove and place popsicle sticks in the molds and return to the freezer. Freeze for another 4-5 hours (or overnight) until popsicles are frozen solid.
How Do You Get Popsicles Out Of The Mold?
To loosen popsicles from the molds, run the sides and bottoms of the popsicle molds under warm-hot water for a few seconds, then the popsicles will easily release from the molds.
What Is The Best Way To Store Popsicles?
- Store them in the popsicles molds themselves if you’re planning on eating them within a few days.
- Place them in an air-tight freezer bag or container, placing a piece of wax paper between the popsicles so they don’t stick together.
- Wrap each popsicle individually in wax paper and place them in an air-tight freezer bag or container if you want to store them for a longer period of time.
- Place each individual popsicle in an air-tight freezer bag. Remove as much air from the bag as possible before sealing it shut. Place all individual popsicles in bags in a large freezer bag.
How Long Do Popsicles Last In The Freezer?
For best results, consume popsicles that have been stored in the freezer within 6 months. Popsicles stored for a longer period of time in the freezer will develop ice crystals and start to lose their flavor.

Yes, you can make popsicles with frozen fruit instead of fresh fruit. Be sure to thaw the frozen fruit first before adding it to your blender.
What Sweeteners Can You Make Homemade Popsicles With?
Store-bought popsicles are often made with refined sugar, and a lot of it. One popsicle may contain as much as 2 teaspoons of sugar. When making homemade popsicles you can substitute refined sugar with honey, pure maple syrup, brown rice syrup and agave. You can also use a blend of 4 cups fresh fruit with 1/2 cup unsweetened apple juice and 1/2 cup unsweetened white grape juice.

Ingredients
- 4 cups fresh strawberries, stems removed and cut in half
- 3/4 cup pure maple syrup
- 1/2 cup water
- 2 tablespoons fresh squeezed lemon juice
Instructions
- Remove stems and cut strawberries in half. (if strawberries are large then cut in quarters)
- Put the strawberries in a bowl with the pure maple syrup and let sit for 10-15 minutes so the strawberries release their juices.
- Heat the water and strawberries in a saucepan over medium low heat for about 5 minutes. Remove from heat and set aside to cool.
- Transfer strawberries to blender and add the lemon juice and puree until mixture is smooth. You can also leave some pieces of strawberries for a more rustic popsicle.
- Divide strawberry mixture among the popsicle molds.
- Place the molds in the freezer for about 1-1/2 to 2 hours then remove and place popsicle sticks in the molds and return to the freezer.
- Freeze for another 4-5 hours (or overnight) until popsicles are frozen solid.
