With the blazing summer heat upon us, treat your family to these Mexican pineapple popsicles. These colorful and flavorful Pineapple Paletas (also called Mexican Paletas, Mexican Ice Pops) are a healthy frozen treat made with fresh fruit, lime juice and a little water.

What Are Paletas?

Paletas are Mexican popsicles made with fresh fruit, sweetener, water or cream. The word “paleta” refers to the wooden stick that the frozen treat is attached to whether it’s frozen blended fruit attached to a stick or frozen cream attached to a stick.

What’s The Difference Between Paletas And Popsicles?

Mexican paletas are made with fresh ripened fruit and popsicles are often made with sweetened fruit juice.

Pineapple Mexican Paletas Recipe

These pineapple popsicles aren’t your usual run-of-the-mill sugary sweet treat.  They’re all natural popsicles made with fresh pineapple, coconut water and lime juice. 

  • Fresh Fruit. We use fresh ripe pineapple for these paletas.
  • Water. We use coconut water for this recipe, but you can use plain filtered water if you prefer. We only add enough to make blending the pineapple into a puree easier.
  • Citrus. We add just a little lime juice to mellow the sweetness.

How To Make Mexican Paletas 

For these Mexican ice pops, we blend some of the fresh pineapple together with the coconut water and lime juice and then finely chop the rest of the pineapple and add it to the mix, so you’ll have little bites of fresh fruit throughout the popsicle.  To make these pineapple Mexican popsicles, you’ll need  a blender or food processor, a popsicle mold (or small paper Dixie cups) and wooden popsicle sticks.  These pineapple Mexican paletas come together in about 10 minutes, then we freeze them for 4-6 hours.

  1. Prep Pineapple.  Peel and chop fresh pineapple.
  2. Blend.  Add most of the chopped pineapple to blender and blend well, keep the rest of the chopped pineapple to add later.
  3. Add water and lime juice. Add water and lime juice to blender and blend into a puree. 
  4. Chopped Pineapple.  Stir in the remainder of the chopped pineapple.
  5. Popsicle Molds.  Divide the mixture among the molds.
  6. Freeze.  Freeze for 30 minutes, then insert sticks and place back in the freezer to freeze until solid.  

Variations

You can also use this recipe to make other flavored Mexican ice pops.

  • Melon (watermelon, cantaloupe, honeydew)
  • Berry (strawberry, blueberry, blackberry, raspberry, cherry)
  • Orange

How Do You Get Popsicles Out Of The Mold?

To loosen popsicles from the molds, run the sides and bottoms of the popsicle molds under warm-hot water for a few seconds, then the popsicles will easily release from the mold.

How Do You Store Homemade Popsicles?

  1. Store homemade popsicles in the popsicles molds themselves if you’re planning on eating them within a few days.
  2. Place them in an air-tight freezer bag or container, placing a piece of wax paper between the popsicles so they don’t stick together.
  3. Wrap each popsicle individually in wax paper and place them in an air-tight freezer bag or container if you want to store them for a longer period of time.
  4. Place each individual popsicle in an air-tight freezer bag. Remove as much air from the bag as possible before sealing it shut. Place all individual popsicles in bags in a large freezer bag.

Can You Make Popsicles With Frozen Fruit?

Yes, you can make popsicles with frozen fruit instead of fresh fruit. Be sure to thaw the frozen fruit first before adding it to your blender.

  • 1 ripe pineapple, peeled
  • 3/4 cup coconut water (or plain bottled water)
  • 2 tablespoons freshly squeezed lime juice

Instructions

  1. Peel and chop fresh pineapple. Reserve 1 cup chopped pineapple and set aside to add later.
  1. Add 2 cups of the chopped pineapple to blender with the coocnut water and lime juice and blend into a puree.
  2. Stir in the remainder of the chopped pineapple into the puree.
  3. Divide the mixture among the popsicle molds.
  4. Freeze for 30 minutes, then insert sticks and place back in the freezer to freeze for another 4 to 6 hours or until frozen solid.
