As far as comfort good goes, these easy garlic mashed potatoes are pretty much at the top of my short-list.They’re easy to make and they are always a hit!

This is probably my favorite way to make mashed potatoes.  I love garlic and I love parmesan cheese, and adding these two ingredients to mashed red potatoes makes mashed potatoes taste amazing!

Garlic Mashed Potatoes Recipe

  • Red potatoes. I leave 3-4 of the potatoes unpeeled so there’ s few colorful flecks in the potatoes after mashing.
  • Garlic. Adds a delicious flavor to these mashed red potatoes.
  • Olive oil and butter. This combo makes the potatoes creamy and adds a rich flavor
  • Milk. I use whole milk when mashing these potatoes.
  • Parmesan cheese. A little added Parmesan cheese makes these potatoes taste amazing.

How to Make Mashed Potatoes

  1. Boil Potatoes – the potatoes are simmered in a pot of water for about 20-25 minutes
  2. Prepare Milk Blend – While the potatoes are cooking,  heat the milk, olive oil, 1 tablespoon butter, and garlic together in a saucepan, then add in the parmesan cheese and stir until it melts into the milk. 
  3. Mash the potatoes  – using an electric mixer, mash the potatoes adding the garlic parmesan cheese milk mixture a little a time for desired consistency.  Season with salt and freshly ground black pepper to taste.
  4. Bake. Transfer the potatoes to an oven-proof bowl. Add the remaining 1/4 cup parmesan cheese to the top of the potatoes and place in the oven and bake for 3-5 minutes or until the cheese has melted. (This last step is optional).
  5. Serve. Remove from the oven and add the remaining tablespoon butter to the top of the potatoes. Serve while hot.

Ingredients

  • 2 1/2 pounds red potatoes, leave 3 or 4 of them unpeeled, quartered
  • 2 cloves garlic, peeled and minced
  • 1/2 teaspoon extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 3/4 cup whole milk
  • 1/2 cup grated parmesan cheese
  • pinch of salt
  • freshly ground black pepper to taste

Instructions

  1. Fill a large pot with water and add the potatoes.
  2. Bring to a boil. Reduce heat and simmer for approximately 20-25 minutes or until the potatoes are tender when tested with a fork.
  3. Remove from heat and drain well.
  4. While the potatoes are cooking, in a small saucepan add the milk, olive oil, 1 tablespoon butter, and garlic. When the milk is heated through (be careful not to scald the milk) add 1/4 cup parmesan cheese and stir until it melts. Remove from heat and set aside.
  5. Preheat the oven to 350 degrees.
  6. Mash the potatoes with the heated garlic milk mixture, adding the milk a little at a time for desired consistency. Add salt and freshly ground black pepper to taste.
  7. Transfer the potatoes to an oven-proof bowl. Add the remaining 1/4 cup parmesn cheese to the top of the potatoes and place in the oven and bake for 3-5 minutes or until the cheese has melted. (Optional)
  8. Remove from the oven and add the remaining tablespoon butter to the top of the potatoes. Serve while hot.
